At a beginner level I would stick with a single microphone. Stereo mics introduce issues such as Comb filtering unless you are extraordinarily precise with your placements. I've owned and used a lot of microphones over the years, and can honestly say they have the sound quality of an average $300 mic. They're clean and detailed, and don't have the cheap sounding high frequency distortion you get from a lot of inexpensive microphones.
